Ingredient Substitutionssaucepan with vegetables

  1. Baking powder (1 tsp)……….1/4 tsp. baking soda + 1/2 tsp. cream of tartar
  2. Baking powder (1 teaspoon)…..1/4 teaspoon baking soda plus 5/8 teaspoon cream of tartar
  3. Bread crumbs, dry(1/4 cup)…..1/4 cup finely crushed cracker crumbs, corn flakes, or quick-cooking or old-fashioned oats
  4. Broth (chicken, beef, vegetable)(1 cup)…..1 tsp chicken, beef, or vegetable bouillon granules (or 1 cube) dissolved in 1 cup boiling water
  5. Chocolate (1 ounce)…..3 tablespoons cocoa plus 1 tablespoon fat
  6. Chocolate (2, 1-ounce squares)…..1/3 cup chocolate chips
  7. Chocolate chips (6 ounces)…..1 cup chocolate chips
  8. Egg (1 whole egg)…..2 egg yolks
  9. Egg (1 whole egg)…..2 1/2 tablespoons sifted dry egg powder plus 2 1/2 tablespoons lukewarm water
  10. Flour (1 tablespoon)…..1/2 tablespoon cornstarch
  11. Flour, cake (1 cup sifted)…..7/8 cup all-purpose flour (Measure 1 cup minus 2 tablespoons)
  12. Flour, wheat (1 cup sifted)…..3/4 cup coarse cornmeal
  13. Flour, wheat (1 cup sifted)…..1 1/2 cups ground rolled oats
  14. Milk (1 cup)…..1/3 cup nonfat dry milk plus 1 cup water
  15. Milk (1 cup)…..1/2 cup evaporated milk plus 1/2 cup water
  16. Milk, sour or buttermilk (1 cup)…..1 tablespoon vinegar or lemon juice plus sweet milk to make 1 cup. Let stand for 5 minutes.
